ooooh this is some good albondigas. So often the albondigas I get has a serious layer of oil on top which is unappetizing. This usually happens when they cook the meatballs entirely in the soup, Mayacos must roast the meatballs first? Or boil them separately because this was not at all oily to my great satisfaction!.
