Fresh Blueberry Prosciutto Bagel

Prosciutto may look like your run of the mile regular ham deli meat. Don’t be fooled though! Prosciutto is very different.

Prosciutto is a rich source of vitamin A. Each 2 oz serving of prosciutto supplies 40.5 percent of the daily recommended intake of this vitamin. Vitamin A increases your night vision; it also helps prevent dry eyes and eye infections. Also a serving of prosciutto gives you a small amount of vitamin C and provides you with a trace amounts of iron.

While you can use prosciutto on a sandwich, this thinly sliced Italian specialty ham is more commonly used in salads and as a topping for pizza. Another common use of prosciutto includes wrapping paper thin slices of prosciutto around melon, usually cantaloupe, to impart aged, salty flavor of the prosciutto on the sweet fruit. However be careful with your portion size. Pairing large amounts of it with fruit, does not make prosciutto a healthy food. Despite the vitamins and minerals, this meat is high in fat and sodium so only use small amounts for taste.

Gourmet open faced bagel marrying blueberries and prosciutto, a modern take on an Italian classic. Easy but fancy!

INGREDIENTS:

  • 1 Everything Bagel, or use your favorite flavor
  • 2 Tablespoons Cream Cheese
  • ¼ Cup Blueberries
  • 3 ½ oz Smoked Prosciutto
  • 2 Cups Arugula

INSTRUCTIONS:

  1. Slice your bagel in half and throw it into the toaster that’s set to your desired doneness.
  2. While the bagel is toasting, smash the blueberry’s up with a mortar and mix it evenly into the cream cheese.
  3. Once the bagels are nice and toasty spread the cream cheese onto each side and top it the arugula and then the prosciutto.
  4. It’s not simple, enjoy!
