Sweet and Spicy Vegan Cake Recipe

This sweet and spicy vegan cake is simple to make and very versatile.  We like these earthy treats with just a little avocado and tomato.  They are WAY under 600 calories and very delicious. You can form this vegan cake mixture into any size and integrate it into a variety of mexican dishes adding quick vegetarian protein!

Cook Time: 30 Min. Serves: 3 Calories: 342 Total Fat: 21 grams  Protein: 16 grams

 

 

Tempeh and tofu sweet and spicy meatless cakes with fresh cilantro and topped with diced avocado and tomato.

INGREDIENTS:

4 ounces of tempeh

7 ounces of soft tofu

3 tablespoons of ground flax seed

2 tablespoons of honey

1 tablespoon of barbecue sauce

.5 cup of fresh chopped cilantro

1 tablespoon of place pepper

1 tablespoon of cayenne pepper

.5 teaspoon of cumin seed

1 whole ripe avocado

1 whole ripe tomato

INSTRUCTIONS:

1.  Preheat your oven to 350 degrees

2.  In a large mixing bowl comine your tempeh and tofu.  The idea is to mix it thoroughly. The tempeh serves as the meaty texture and the soft tofu acts as a binder.

3.  Once you have gotten this mixed add the rest of the ingredients save the avocado and tomato.

4.  Form the patties and lay them into a baking dish that you pre-coat with either a fine mist of olive oil or canola oil to prevent the patties from sticking.

5.  Bake for 25-30 minutes and then remove them from the oven.  Let them rest a few minutes before serving.

6.  Plate the cake with diced avocado and tomato or the dressing/ salsa of your preference.

Per our mention at the beginning of this post, these vegan cakes can be used in a variety of dishes.  Due to the earthy cumin and cayenne elements of these cakes we think they work best in mexican and south american dishes.  You could use them as protein for burritos, layered casseroles, or try making a meatless torta sandwich.   You might be thinking that these would make good vegetarian albondigas soup….warning, do not try to make soup out of these cakes as they will dissolve!
